  • Every year around this time, I find myself reflecting on just how blessed ๐Ÿฅน I really am. Getting to do this as my full-time job still feels surreal some days, and being able to bring one of my closest friends on this journey with me has made the work feel lighter, fuller, and so much more meaningful. Most of all, Iโ€™m grateful that my family is ๐˜ฉ๐˜ฆ๐˜ข๐˜ญ๐˜ต๐˜ฉ๐˜บ ๐˜ข๐˜ฏ๐˜ฅ ๐˜ฉ๐˜ข๐˜ฑ๐˜ฑ๐˜บ โ€” something I will never take for granted. This yearโ€™s Thanksgiving ๐Ÿฆƒ looked a little different for us. We spent the day โ€” just the four of us โ€” on a beautiful hike in Whistler, British Columbia. Thereโ€™s truly no better place (nature) to be reminded not to take the simple things in life for granted, to appreciate each and every day and the beauty this world has to offer.

  • I shared my Eggplant parmesan recipe (secret ingredient) a few reels back. Now you need to try this delicious Eggplant Burrata I ordered this at a local restaurant and decided that I could recreate at home. The results - chef's kiss! ๐Ÿ˜š 1. Eggplant (out of oven - for breading and prep, see my Eggplan Parm recipe) 2. Layer the eggplan, tomato 2 times. Add half a ball of burrata to the top. 3. For added nutrition, I started sprinking micro greens over the top (delish) 4. Drizzle with olive oil, pinch of salt (celtic sea salt is my go to) 5. Drizzle with a balsamic glaze for the final touch! #italianrecipes #healthyfood #farmtotabledish
