  • I shared my Eggplant parmesan recipe (secret ingredient) a few reels back. Now you need to try this delicious Eggplant Burrata I ordered this at a local restaurant and decided that I could recreate at home. The results - chef's kiss! 😚 1. Eggplant (out of oven - for breading and prep, see my Eggplan Parm recipe) 2. Layer the eggplan, tomato 2 times. Add half a ball of burrata to the top. 3. For added nutrition, I started sprinking micro greens over the top (delish) 4. Drizzle with olive oil, pinch of salt (celtic sea salt is my go to) 5. Drizzle with a balsamic glaze for the final touch! #italianrecipes #healthyfood #farmtotabledish
