  • Every year around this time, I find myself reflecting on just how blessed 🥹 I really am. Getting to do this as my full-time job still feels surreal some days, and being able to bring one of my closest friends on this journey with me has made the work feel lighter, fuller, and so much more meaningful. Most of all, I’m grateful that my family is 𝘩𝘦𝘢𝘭𝘵𝘩𝘺 𝘢𝘯𝘥 𝘩𝘢𝘱𝘱𝘺 — something I will never take for granted. Those are just a few of the many things I’m thankful for this season, but I also want to thank you. 𝗧𝗿𝘂𝗹𝘆… 𝘁𝗵𝗮𝗻𝗸 𝘆𝗼𝘂 𝗳𝗼𝗿 𝗯𝗲𝗶𝗻𝗴 𝗵𝗲𝗿𝗲, 𝗳𝗼𝗿 𝘀𝗵𝗼𝘄𝗶𝗻𝗴 𝘂𝗽, 𝗮𝗻𝗱 𝗳𝗼𝗿 𝗯𝗲𝗶𝗻𝗴 𝘀𝘂𝗰𝗵 𝗮 𝘀𝗽𝗲𝗰𝗶𝗮𝗹 𝗽𝗮𝗿𝘁 𝗼𝗳 𝘁𝗵𝗶𝘀 𝗰𝗼𝗺𝗺𝘂𝗻𝗶𝘁𝘆. This year’s Thanksgiving 🦃 looked a little different for us. We spent the day — just the four of us — on a beautiful hike in Whistler, British Columbia. There’s truly no better place (nature) to be reminded not to take the simple things in life for granted, to appreciate each and every day and the beauty this world has to offer.

  • I shared my Eggplant parmesan recipe (secret ingredient) a few reels back. Now you need to try this delicious Eggplant Burrata I ordered this at a local restaurant and decided that I could recreate at home. The results - chef's kiss! 😚 1. Eggplant (out of oven - for breading and prep, see my Eggplan Parm recipe) 2. Layer the eggplan, tomato 2 times. Add half a ball of burrata to the top. 3. For added nutrition, I started sprinking micro greens over the top (delish) 4. Drizzle with olive oil, pinch of salt (celtic sea salt is my go to) 5. Drizzle with a balsamic glaze for the final touch! #italianrecipes #healthyfood #farmtotabledish
